Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped (about 1/2 cup)
  • 1/8 teaspoon salt
  • 1 pound lean ground beef
  • 1 clove garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 cup Swanson® Beef Stock
  • 1 tablespoon lime juice
  • 1/4 cup chopped fresh cilantro
  • 12 corn tortilla (6-inch), warmed

Instructions

  • Tips

    • Serving Suggestion: Get creative with your toppings!  Try jalapeño peppers, avocado, tomato, green onion, red cabbage, queso fresco, salsa, crema, sriracha and/or lime.
  • Step 1

Heat the oil in a 12-inch skillet over medium-high heat.  Add the onion and salt and cook for 3 minutes or until the onion is tender, stirring occasionally.

  • Step 2

Add the beef to the skillet and cook until well browned, stirring often to separate meat.  Pour off any fat.  Add the garlic, chili powder, cumin and stock and heat to a boil.  Cook for 3 minutes or until the stock is reduced by half, stirring occasionally.  Stir in the lime juice.  Serve the beef mixture in the tortillas.  Sprinkle with the cilantro.
