Chicken, bacon, ranch, avocado. Has there ever been a more perfect combination? This Ranch Chicken Salad recipe is chicken salad, but with ranch dressing mix stirred into the mayo, crisp bacon added, and the whole thing served in avocado halves.  Keto-friendly or just plain hungry, this recipe fits the bill. And, the canned chicken makes it almost too easy to make- 10 minutes and a few pantry staples and it's ready to eat. Ingredients

  • 1/3 cup mayonnaise
  • 1/2 envelope ranch dressing mix (about 1 tablespoon)
  • 1 can (12.5 ounces) Swanson® Premium White Chicken Breast in Water, drained
  • 1/3 cup seeded, diced red bell pepper or sliced green onions
  • 1/4 cup crumbled cooked bacon
  • 1 stalk celery, diced (about 1/4 cup)
  • 2 avocado, pitted, peeled and halved

Instructions

  • Step 1

    Stir the mayonnaise and ranch dressing mix in a bowl.  Add the chicken, red pepper, bacon and celery and stir to coat.  Season with salt and pepper.

  • Step 2

    Serve the chicken mixture among the avocado halves.
