One Dish Creamy Chicken & Sausage Bake

This creamy twist on an Italian favorite takes just 15 minutes to assemble.  Then pop in the oven and steal a little quiet time for yourself.   Serve with some crusty bread to sop up every bit of flavor.

Ingredients

  • 1 1/4 pounds boneless, skinless chicken thigh or breasts
  • 1/2 teaspoon Italian seasoning, crushed (crushing the seasoning releases the aromatic oils for more flavor- just use your fingers to crush before adding)
  • 8 ounces mild Italian pork sausage, sliced
  • 1 large onion, cut in half and sliced (about 1 cup)
  • 2 small assorted bell peppers (green, red, yellow), cut into 1-inch pieces (about 1 1/2 cups)
  • 1 can (10.5 ounces) Campbell’s® Condensed Cream of Mushroom Soup or (10 1/2 ounces) Campbell’s® Condensed 98% Fat Free Cream of Mushroom Soup
  • 1/2 cup Swanson® Natural Goodness® Chicken Broth or dry white wine
  • 2 tablespoons tomato paste
  • 1 clove garlic, minced

  • Tips

    • For kid appeal, substitute 8 ounces frozen mini meatballs (1/2-ounce size) for the Italian sausage.
  • Step 1

    Set the oven to 375°F.

  • Step 2

    Season the chicken as desired and sprinkle with the Italian seasoning.  Arrange the chicken and sausage in a 13x9x2-inch baking dish.

  • Step 3

    Stir the onion, peppers, soup, wine, tomato paste and garlic in a medium bowl.  Pour the vegetable mixture over the chicken and sausage.

  • Step 4

    Bake for 40 minutes or until the chicken and sausage are cooked through, turning the chicken over and stirring the vegetable mixture once halfway through the baking time.
