Originally developed with Mexican Tortilla Flavor Infused Broth, we’ve updated this recipe to use Swanson® Chicken Broth, cumin and lime juice for authentic Mexican flavor. This rice is delicious on its own as a main dish, simply pair it with a salad, or serve it as a side dish with grilled or roasted meat.
Ingredients
- 1 tablespoon olive oil
- 1 cup uncooked long grain white rice
- 1 medium onion, diced (about 1/2 cup)
- 1 medium green bell pepper, diced (about 1 cup)
- 2 tablespoons tomato paste
- 2 1/2 cups Swanson® Chicken Broth or Natural Goodness Lower Sodium Chicken Broth or Organic 100% Natural Chicken Broth
- 2 teaspoons ground cumin
- 1 can (about 15 ounces) black beans, rinsed and drained
- 1 tablespoon lime juice
- 1/4 cup chopped fresh cilantro

- Add even more flavor by stirring in some diced ham.
- Make It Spicy: Swap in Swanson® Spicy Chicken Broth in place of our non-spicy version to bring the heat to this recipe.

Step 1
Heat the oil in a 4-quart saucepan over medium-high heat. Add the rice, onion and pepper and cook and stir for 2 minutes. Add the tomato paste and cook and stir for 1 minute (This will caramelize the sugars in the tomato paste and deepen the flavor).

Step 2
Stir in the broth and cumin and heat to a boil. Reduce the heat to low. Cover and cook for 15 minutes or until the rice is tender. Stir in the beans and cook until the mixture is hot. Stir in the lime juice. Season the taste. Sprinkle with the cilantro before serving.
