Ingredients
- 1 can (12.5 ounces) Swanson® Premium White Chicken Breast in Water, drained
- 1 egg
- 2 tablespoons mayonnaise
- 2/3 cup almond flour
- 2 green onion (scallion), chopped (about 1/2 cup)
- 1/2 cup Cheddar cheese
- 1 teaspoon grated lemon zest
- 2 tablespoons olive oil
Instructions

Step 1
Place the chicken into a bowl and break it up into smaller pieces with a fork. Add the egg, mayonnaise, almond flour, green onions, cheese and lemon zest and mix well.

Shape the mixture firmly into 8 patties (if the patties fall apart easily, place the patties onto a baking sheet and refrigerate for 30 minutes).

Heat 1 tablespoon oil in a 12-inch nonstick skillet over medium-high heat. Add half the patties to the skillet and cook for 4 minutes. Turn the patties over and cook for 3 minutes or until lightly browned. Repeat with the remaining patties and remaining oil, if needed. Serve hot.
