These Chicken Patties are keto-friendly and, taste fantastic.  Crispy and golden on the outside, chicken, Cheddar cheese and green onions on the inside- they're ready in only 25 minutes.  The texture of the canned chicken is actually ideal for this chicken patty recipe, because it binds better than diced cooked chicken, making a mixture that's perfect for pan-frying in olive oil until golden.  And, there are so many ways to serve them!  Try them served with your favorite keto sauce for dipping, or on top of a salad instead of salmon or shredded chicken.  You'll start keeping canned chicken in the pantry just so you can make these Keto-Friendly Chicken Patties!
 

Ingredients

  • 1 can (12.5 ounces) Swanson® Premium White Chicken Breast in Water, drained
  • 1 egg
  • 2 tablespoons mayonnaise
  • 2/3 cup almond flour
  • 2 green onion, chopped (about 1/2 cup)
  • 1/2 cup Cheddar cheese
  • 1 teaspoon grated lemon zest
  • 2 tablespoons olive oil

Instructions

  • Step 1

    Place the chicken into a bowl and break it up into smaller pieces with a fork.  Add the egg, mayonnaise, almond flour, green onions, cheese and lemon zest and mix well.  

  • Step 2

    Shape the mixture firmly into 8 patties (if the patties fall apart easily, place the patties onto a baking sheet and refrigerate for 30 minutes).

  • Step 3

    Heat 1 tablespoon oil in a 12-inch nonstick skillet over medium-high heat.  Add half the patties to the skillet and cook for 4 minutes.  Turn the patties over and cook for 3 minutes or until lightly browned.  Repeat with the remaining patties and remaining oil, if needed.  Serve hot.
