Step 1
Heat the oil in a 6-quart saucepot over medium-high heat. Add the pepper, garlic and Cajun seasoning and cook for 2 minutes, stirring occasionally.

Stir in the broth, water and uncooked penne and heat to boil. Reduce the heat to medium. Cook for 15 minutes or until the penne is tender, stirring occasionally. Remove the saucepot from the heat.

Stir in the chicken, cream and cheese. Cover and let stand for 5 minutes. Season to taste. Stir in chopped fresh parsley just before serving. Serve with additional cheese, if desired.
