Braised Artichokes with White Wine and Herbs

These easy Braised Artichokes with White Wine and Herbs are so delicious and easy to prepare. Don't be intimidated by the bit of time it takes to trim and quarter the artichokes— it is worth the few minutes it takes! The tender, savory artichokes make a great side dish, but they can also be enjoyed at room temperature or served chilled on a salad. Cooked in a combination of savory broth, wine, garlic and herbs, they get extra punch and freshness from the lemon zest and fresh parsley that you stir in at the end of cooking. 

Ingredients

  • 1 cup Swanson® Chicken Broth or 100% Natural Vegetable Broth
  • 1/4 cup white wine
  • 2 tablespoons extra virgin olive oil
  • 3 sprigs fresh thyme leaves
  • 2 cloves garlic, peeled and smashed
  • 1 dried bay leaf
  • 8 medium fresh artichoke, trimmed and cut in quarters
  • 1 teaspoon grated lemon zest
  • 2 tablespoons fresh parsley, chopped

    • How to Trim & Quarter Artichokes: Cut artichokes brown quickly, so have a fresh lemon half on hand to rub on freshly cut surfaces and squeeze the remaining lemon into a bowl of water.  Snap off the dark green outer leaves, leaving the pale greenish-yellow inner leaves only.  Cut off the top 1/3 of the artichoke.  Cut off all but 1-inch of the stem and cut off the tough outer layer from the stem and anything remaining from the outer leaves.  Cut the artichoke into quarters, and remove the prickly leaves and fuzzy choke.  Place the artichoke quarters into the lemon water until ready to cook.
  • Step 1

    Heat the broth, wine, oil, thyme, garlic and bay leaf in a 4-quart saucepan over high heat to a boil.  Add the artichokes.  Reduce the heat to medium-low.  Cook for 20 minutes or until artichokes are tender when pierced with a fork.  Stir in the lemon zest and parsley and remove the saucepan from the heat.

    Season to taste with salt and pepper and serve hot, spooning any remaining broth mixture over the artichokes.
