These speedy Spinach Lasagna Roll-Ups pack a flavorful punch with layers of our Big Batch Creamy Garlic Parmesan Chicken wrapped in tender noodles. The recipe couldn’t be simpler: Just mix the pre-made chicken filling with mozzarella and ricotta, roll it in lasagna noodles, and spoon some tomato sauce over the top before popping it in the oven. The protein-packed chicken filling makes each of these Spinach Lasagna Roll-Ups satisfying on its own, but you can also serve with a side salad and garlic bread for a full Italian meal.
Step 1
Cook and drain the noodles according to the package directions. While the noodles are cooking, heat the oven to 400°F. Stir the Creamy Garlic Parmesan mixture, ricotta cheese, egg and 1/2 cup mozzarella cheese in a medium bowl.
Step 2
Spread 1/2 cup Italian sauce on the bottom of an 11x8x2-inch baking dish. On a work surface, top each cooked noodle with about 1/2 cup chicken mixture. Spread almost to the edges, leaving a small amount of space so the filling doesn’t spill over. Roll up like a jelly roll. Place the roll-ups, seam-side down, into the baking dish. Pour the remaining Italian sauce over the roll-ups. Cover the baking dish.
Step 3
Bake for 30 minutes or until hot. Uncover and sprinkle with the remaining 1/2 cup mozzarella cheese.
Step 4
Bake, uncovered, for 10 minutes or until the cheese is melted. Let stand for 10 minutes before serving.
