You have chicken and green beans on hand- now how do you turn it into dinner?  This Spicy Chicken Stir-Fry with Green Beans recipe makes it quick and easy.  Start with some Campbell's® Condensed Spicy Tomato Soup.  It's the slightly sweet, spicy base for an easy stir-fry sauce- just add ginger, garlic, soy sauce and brown sugar.  Stir-fry the chicken and green beans, then add the delicious sauce to finish.  You can serve it over a pile of hot cooked white or brown rice, or even some rice noodles.  Try it sprinkled with chopped roasted peanuts and sliced green onion- a delicious dinner is served!

Ingredients

  • 2 tablespoons vegetable oil (amount divided in recipe steps below)
  • 6 ounces fresh green beans, trimmed and cut into 2-inch pieces (about 2 cups)
  • 3 cloves garlic, thinly sliced
  • 1 teaspoon grated peeled ginger root
  • 1 1/4 pounds boneless, skinless chicken breast, cut into thin strips
  • 1 can (10 3/4 ounces) Campbell's® Condensed Spicy Tomato Soup
  • 1/2 cup Swanson® Chicken Broth or Swanson® Natural Goodness® Chicken Broth
  • 1 tablespoon reduced sodium soy sauce
  • 1 tablespoon packed brown sugar
  • 2 green onion, thinly sliced (about 1/4 cup) (optional)
  • 2 tablespoons chopped dry roasted unsalted peanuts (optional)
  • 3 cups hot cooked white rice (optional)

Instructions

  • Step 1

    Heat 1 tablespoon oil in a 12-inch skillet over medium-high heat.  Add the green beans and stir-fry for 2 minutes or until slightly charred.

  • Step 2

    Reduce the heat to medium.  Add the garlic and ginger and cook and stir for 30 seconds or until the garlic is lightly browned.  Remove the green bean mixture from the skillet.

  • Step 3

    Heat the remaining 1 tablespoon oil in the skillet over medium-high heat.  Add the chicken and stir-fry until done.  Stir in the soup, broth, soy sauce and brown sugar and heat to a boil.  Reduce the heat to medium.  Cook for 1 minute.

  • Step 4

    Return the green bean mixture to the skillet and stir-fry until hot.  Garnish with the green onions and peanuts and serve over hot cooked rice, if desired.
