There are so many global cuisines that use tomatoes, like this Moroccan Smoky Tomato & Harissa Soup recipe, inspired by Moroccan recipes and cooking. What is harissa? Harissa is a spicy roasted red pepper paste, popular in Moroccan cooking, here used in its powdered form. The incredibly versatile tomato gets a sophisticated treatment, with smoky notes from paprika and heat from the harissa powder. Together, they add a depth of flavor to this otherwise simple Moroccan Smoky Roasted Tomato & Harissa Soup recipe, making it extra comforting as a starter or side.

Ingredients

  • 1 teaspoon olive oil
  • 1 onion, cut in half and thinly sliced (about 1/2 cup)
  • 1 clove garlic, minced
  • 1/4 teaspoon smoked paprika
  • 2 teaspoons Harissa dry seasoning
  • 1 can (10 3/4 ounces) Campbell’s® Condensed Tomato Soup
  • 1 1/4 cups water
  • 2 teaspoons chopped fresh parsley

  • Step 2

Stir in the soup and water and heat to a boil.  Reduce the heat to low.  Cook for 5 minutes.  Season to taste with salt and pepper.  Sprinkle with the parsley before serving.
