With a can of Campbells® Condensed Spicy Nacho Cheese Soup and some shredded rotisserie chicken, you can have a quick and easy meal to spice up any weeknight. These Fully Loaded Chicken Queso Tacos turn the classic Tex-Mex nachos into a satisfying dish. Make them with just a few garnishes or go all in with a full load of extras to add to the chicken filling and crunchy shells.

Ingredients

  • 1 tablespoon olive oil
  • 1/2 medium white onion, chopped
  • 1 teaspoon dried oregano leaves
  • 1/2 teaspoon ground cumin
  • 2 1/2 cups (10 ounces) shredded cooked chicken from a rotisserie bird
  • 1 can (10.75 ounces) Campbell's® Condensed Spicy Nacho Cheese Soup
  • 2 tablespoons Pace® Picante Sauce, plus more for garnish (optional)
  • 12 taco shell, warmed in a 350°F. oven for 4-5 minutes
  • 1 1/2 cups red cabbage, finely shredded
  • 2 avocado, peeled and diced
  • 1 cup packed fresh cilantro leaves

  • Tips

    • Additional garnishes (optional): Top tacos with crumbled cotija or feta cheese, pickled jalapeño slices, sour cream and/or sliced radishes.  Serve with lime wedges on the side.
    • Serving suggestion: Red cabbage adds color and crunch (instead of lettuce); it’s often found in Mexican dishes. 
    • Serving suggestion: Cotija cheese is a nice authentic touch that packs a salty punch. If you can’t find it at your local grocery store, feta is a good substitute. 
  • Step 1

    In a large skillet over medium heat, heat the oil. Add the onion, oregano and cumin. Cook for 3-4 minutes, or until the onion softens.

  • Step 2

    Stir the shredded chicken, Campbell's® Condensed Spicy Nacho Cheese Soup, and Pace® Picante Sauce into the skillet. Cook and stir for 2-3 minutes, or until hot.

  • Step 3

    Fill each warmed shell with about 2 tablespoons of the chicken filling. Top with shredded cabbage, avocados, and cilantro. Serve 3 tacos per person with additional garnishes.
