Tomato and basil are an unstoppable duo — especially when you combine them in one velvety, satisfying soup. With just 5 minutes of prep time, you can take your can of Campbell's® Condensed Tomato Soup to the next level with some clever additions: herbs and oat milk, or your preferred creamy dairy alternative. The combo is so silky and rich, no one would guess that this recipe is vegan. Garnish a bowl of this Creamy Dairy-Free Tomato Basil Soup with some fresh basil, and you've got a starter or side that everyone will love.

Ingredients

  • 1 can (10 3/4 ounces) Campbell’s® Condensed Tomato Soup
  • 1/3 cup water
  • 1 cup Pacific Foods™ Barista Series™ Oat Original, or preferred dairy alternative
  • 1/4 teaspoon dried basil leaves
  • 1 tablespoon fresh basil leaves, sliced thin

Instructions

  • Tips

    • For a heartier texture, try adding in some canned roasted tomatoes, then blending the soup using an immersion or stand blender until it reaches your desired consistency. 
    • To give the soup a kick, grab a can of Campbell's® Condensed Spicy Tomato Soup as your base. Or, layer in spicy flavors to our non-spicy version by adding a 1/4 teaspoon of cayenne pepper, or sprinkle on some red chili flakes, or a spoonful of chili crisp, a little at a time, until you reach your ideal heat level.
    • For some crunch, top your soup with a sprinkling of roasted pine nuts.
    • To deepen flavor of soup, replace water with Swanson® Vegetable Broth.
  • Step 1

    Heat the soup and water in a 2-quart saucepan over medium heat to a boil.  Reduce the heat to low.

  • Step 2

    Stir in the oat milk and dried basil and cook for 5 minutes (do not boil).  Season to taste with salt and pepper.  Sprinkle with the fresh basil before serving.
