This Cheddar Broccoli Chicken & Mashed Potatoes is a bowl of comfort that you can make in 30 minutes (okay- you can serve it on plates- but we like curling up with bowls of this after a long day!).  Hot mashed potatoes on the bottom and the cheesy chicken and broccoli mixture spooned over the top.  The chicken and broccoli are smothered in a rich, creamy sauce made with condensed broccoli cheese soup.  We eat Cheddar Broccoli Chicken & Mashed Potatoes because it's yummy, but it's also a balanced meal in a bowl!

Ingredients

  • 1 1/4 pounds boneless, skinless chicken breast (4 small or 2 large cut in half lengthwise for thinner pieces)
  • 1 tablespoon vegetable oil
  • 1 can (10.5 ounces) Campbell’s® Condensed Broccoli Cheese Soup
  • 1/3 cup milk
  • 2 cups fresh or thawed frozen broccoli florets (about 6 ounces)
  • 4 cups hot mashed potatoes

Instructions

  • Step 1

    Season the chicken with salt and pepper.  Heat the oil in a 10-inch skillet over medium-high heat.  Add the chicken and cook for 6 minutes or until browned on both sides (make sure the skillet and oil are hot before adding the chicken).

  • Step 2

    Stir the soup, milk and broccoli in the skillet and heat to a boil.  Reduce the heat to low.  Cover and cook for 5 minutes or until the chicken is done.  Season to taste.  Serve the chicken and sauce over the potatoes.
