This is not your average pasta dish! Skillet Cajun Shrimp Alfredo is just as quick and easy, but tastes so much better. Saute andouille sausage with bell pepper and onion, then add shrimp, Cajun seasoning and a velvety Alfredo sauce and simmer. The combination of smoky, savory and spicy flavors (with a hint of cream and Parmesan cheese from the Alfredo) elevates this pasta recipe beyond the everyday (even though you can make it any day since it only takes 20 minutes!). Skillet Cajun Shrimp Alfredo is perfect as a Fat Tuesday dish or a regular weeknight dinner.
Step 1
Cook and drain the penne according to the package directions. While the penne is cooking, heat the oil in a 12-inch skillet over medium-high heat. Add the sausage, pepper and onion and cook for 3 minutes, stirring occasionally.
Step 2
Add the shrimp and Cajun seasoning to the skillet and cook for 3 minutes or until the shrimp are done.
Step 3
Stir in the sauce and cook until hot. Add the cooked penne and toss to coat. Serve topped with the tomatoes and parsley, if desired.
