Parmesan-Crusted Pesto Salmon is actually a whole sheet-pan dinner. All of the cooking is hands-free, making it perfect for a busy weeknight. Roast potatoes on a sheet pan to start, then push them to one side and add the salmon fillets and broccoli. Drizzle creamy roasted garlic pesto sauce over everything, then sprinkle the salmon with Parmesan-panko topping. Bake until the salmon and vegetables are done and the topping is crispy. As good as that sounds, it tastes even better!
Step 1
Heat the oven to 400°F. While the oven is heating, mix the panko, cheese and 1/2 tablespoon oil in a small bowl.
Step 2
Place the potatoes on a baking sheet. Drizzle with 1 tablespoon oil and toss to coat. Season with salt and pepper.
Step 3
Roast the potatoes for 30 minutes. Remove from the oven, stir and push to one side of the baking sheet.
Step 4
Arrange the broccoli in the center of the baking sheet and the salmon on the other side. Drizzle the broccoli and salmon with the remaining 1 tablespoon oil. Spoon about 2 tablespoons sauce on each salmon fillet. Sprinkle the salmon with the panko mixture. Drizzle the remaining sauce over the broccoli and potatoes.
Step 5
Bake for 10 minutes or until the salmon is done. Stir the broccoli and potatoes before serving.
