Step 1
Heat the oil in a 12-inch skillet over medium-high heat. Add the sausage, onion and crushed red pepper and cook for 5 minutes, stirring often to separate meat. Pour off any fat.

Stir in the sauce, water and uncooked noodles and heat to a boil. Reduce the heat to medium-low. Cover and cook for 15 minutes or until the noodles are tender and the sausage is done, stirring often (stirring is important to separate the noodles and prevent sticking).
Step 3
Add the spinach, a handful at a time, cooking just until wilted. Stir in the Parmesan cheese, lemon juice and lemon zest. Season to taste. Sprinkle with the mozzarella cheese and drop the ricotta by spoonfuls on top. Cover and let stand until the mozzarella cheese is melted.
