Want homemade lasagna on a weeknight?  Try this One Pot Skillet White Lasagna recipe.  It's a skillet lasagna, so everything cooks in one pan, even the noodles!  Brown sausage with onion and crushed red pepper, then add a rich and creamy Alfredo sauce and uncooked lasagna noodles.  Simmer, then stir in some Parmesan cheese and spinach.  Sprinkle with mozzarella cheese and dollop with ricotta.  It's hearty and comforting and cooks in only 30 minutes!  One Pot Skillet White Lasagna is a perfect easy dinner any night of the week.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound Italian pork sausage, casing removed or ground turkey
  • 1 large onion, chopped (about 1 cup)
  • 1/4 teaspoon crushed red pepper
  • 1 jar (14.5 ounces) Prego® Homestyle Alfredo Sauce
  • 2 cups water
  • 6 uncooked lasagna noodles (about 6 ounces), broken into 1-inch pieces
  • 4 ounces baby spinach (about 4 cups)
  • 2 tablespoons grated Parmesan cheese
  • 2 teaspoons lemon juice
  • 1/2 teaspoon grated lemon zest
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup ricotta cheese

Instructions

  • Step 1

    Heat the oil in a 12-inch skillet over medium-high heat.  Add the sausage, onion and crushed red pepper and cook for 5 minutes, stirring often to separate meat.  Pour off any fat.

  • Step 2

    Stir in the sauce, water and uncooked noodles and heat to a boil.  Reduce the heat to medium-low.  Cover and cook for 15 minutes or until the noodles are tender and the sausage is done, stirring often (stirring is important to separate the noodles and prevent sticking).

  • Step 3

    Add the spinach, a handful at a time, cooking just until wilted.  Stir in the Parmesan cheese, lemon juice and lemon zest.  Season to taste.  Sprinkle with the mozzarella cheese and drop the ricotta by spoonfuls on top.  Cover and let stand until the mozzarella cheese is melted.
