There's something really comforting about this One Pot Chicken Sausage & Orzo recipe. The rice-sized orzo pasta cooks up creamy like risotto, in a white wine-tomato cream sauce to make it even more rich and delicious. And it's really simple to make. Just brown some Italian-style chicken sausage, then sauté the uncooked orzo in the same pan, with dry white wine. Add the thick and chunky tomato three cheese sauce and some savory broth and simmer until the orzo is tender and creamy. Stir in kale for beautiful color and a veggie boost and dinner is ready! One Pot Chicken Sausage & Orzo is great served with some Parmesan cheese or add a sprinkle of crushed red pepper for a little heat and some warm crusty bread on the side.
Step 1
Season the sausage with salt and pepper. Heat the oil in a 12-inch skillet over medium-high heat. Add the sausage and cook until browned. Remove from the skillet, cover and keep warm.
Step 2
Add the onion and red pepper to the skillet and cook over medium-high heat for 3 minutes or until the onion is tender.
Step 3
Add the orzo and stir to coat with the oil. Add the wine and cook and stir for 2 minutes or until the wine is absorbed. Add the sauce and broth and heat to a boil. Reduce the heat to medium. Cook for 10 minutes or until the orzo is tender, stirring occasionally.
Step 4
Add the heavy cream and kale and cook and stir until the kale is wilted. Stir in the sausage. Serve with grated Parmesan cheese, if desired.
