Everyone loves a burrito bowl.  What makes One Pan Fire-Roasted Tomato Burrito Bowl special is that everything cooks all in one pan, so you have a saucy, hearty mixture of beef, peppers, onions, rice and corn that you can spoon into bowls and top with your favorite toppings (or not- if you have a bowl of tortilla chips out we doubt it will last long enough to add any toppings!).  The fire-roasted tomato sauce brings it all together with some amazing flavor!  This meal in a bowl is ready in just 25 minutes, which is nearly instant gratification compared to takeout.  Give One Pan Fire-Roasted Tomato Burrito Bowls a try tonight!

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, diced (about 1 cup)
  • 1 large green bell pepper, diced (about 1 1/4 cups)
  • 1 pound ground beef
  • 2 teaspoons cumin
  • 2 teaspoons chili powder
  • 1 jar (23.5 ounces) Prego® Fire Roasted Tomato Pasta Sauce
  • 2 cups water
  • 1 1/2 cups uncooked instant white rice
  • 1 cup frozen whole kernel corn, thawed
  • 1/2 cup shredded Cheddar cheese

Instructions

  • Step 1

    Heat the oil in a 12-inch skillet over medium-high heat. Add the onion and pepper and cook until tender-crisp, stirring occasionally.

  • Step 2

    Season the beef with salt and pepper. Add the beef to the skillet and cook until browned, stirring often to separate meat. Pour off any fat. Stir in the cumin and chili powder and cook for 1 minute.

  • Step 3

    Stir in the sauce, water, and rice and heat to a boil. Reduce the heat to low. Cover and cook for 5 minutes or until rice is tender.

  • Step 4

    Stir in the corn. Sprinkle the cheese over the beef mixture and top with your favorite burrito toppings.
