No need to cook the lasagna noodles...just layer them right in the pan with the cheeses, spinach and tomato-mushroom sauce.
Step 1
Set the oven to 400°F. Stir the ricotta cheese, spinach, 1 cup mozzarella cheese and the Parmesan cheese in a large bowl. Season with salt and pepper.
Step 2
Spread 1 cup sauce in an 11x8x2-inch baking dish. Top with 3 lasagna noodles and half the spinach mixture. Repeat the layers. Top with the remaining sauce. Cover the baking dish.
Step 3
Bake for 40 minutes. Uncover the dish. Sprinkle with the remaining mozzarella cheese. Bake for 10 minutes or until hot. Let stand for 20 minutes before serving.
