Just place chicken thighs, bell peppers, onion and garlic smothered in thick and hearty sauce (like chunky tomato, basil and garlic or cremini pomodoro) and wine onto a sheet pan and pop it into the oven. It's a hands-free version of a classic that will make you wonder why anyone would make chicken cacciatore any other way!
Step 1
Heat the oven to 425°F. While the oven is heating, brush a rimmed baking sheet with the olive oil.
Step 2
Place the chicken, mushrooms, peppers, onion and garlic into a large bowl. Add the sauce and wine and toss to coat. Season with salt and pepper. Transfer the mixture to the baking sheet.
Step 3
Bake for 20 minutes. Stir. Bake for another 15 to 20 minutes or until the chicken is done. Serve before serving. Serve sprinkled with chopped fresh parsley, if desired.
