This Easy Chickpea & Spinach Curry transforms a humble pantry staple into a satisfying meal with minimal effort. The recipe cleverly uses our jarred Creamy Tomato Sauce with Garlic as a shortcut, infusing it with warming curry powder and earthy cumin to create a flavor-packed base that tastes like it's been simmering for hours. Tender chickpeas absorb the rich, creamy sauce, becoming plump and flavorful. Fresh spinach wilts into the warm curry. The combination of creamy sauce, plant protein from chickpeas and fresh elements creates a balanced, satisfying meal in just one pot.

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped (about 1 cup)
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 jar (23.75 ounces) Prego® Creamy Tomato with Garlic Sauce
  • 3 cans (about 15 ounces each) chickpeas (garbanzo beans), (before rinsing, drain liquid, reserving 1/4 cup)
  • 5 ounces baby spinach (about 5 cups)
  • 2 tablespoons chopped fresh cilantro (optional)
  • 1/3 cup plain Greek yogurt (optional) 

Instructions

  • Step 1

    Heat the oil in a 12-inch skillet over medium heat.  Add the onion and season with salt.  Cook for 5 minutes or until onion is tender crisp, stirring occasionally.

  • Step 2

    Add the curry powder and cumin and cook and stir for 1 minute.  Add the sauce and heat to a boil.

  • Step 3

    Stir in the chickpeas and reserved liquid.  Reduce the heat to low.  Cover and cook for 5 minutes, stirring occasionally.  Add spinach and cook and stir until wilted.  Serve topped with the cilantro and yogurt, if desired. Serve with rice and naan, if desired.
