A symphony of flavors that elevates the humble tortellini into a rich, complex dish. This Creamy Tomato Tortellini with Chicken Sausage dish transforms simple ingredients into a deeply layered meal, where every element is carefully coaxed to reveal its fullest potential. The magic begins with sundried tomato oil–a golden elixir that becomes the foundation for building intense, concentrated flavor. Plump tortellini swim in our luxurious Creamy Tomato Sauce with Ricotta that balances creamy smoothness with bright, concentrated tomato depth. Chicken sausage adds a savory backbone, while sauteed onions and garlic weave an aromatic complexity throughout the dish. A splash of white wine brings a subtle brightness that lifts and elongates the rich sauce, creating a balance that keeps each bite intriguing.

Ingredients

  • 1 1/2 tablespoons oil from jarred sun-dried tomatoes in olive oil
  • 12 ounces fully-cooked Italian-style pre-cooked chicken sausage, sliced (4 links)
  • 1/3 cup thinly sliced sun-dried tomatoes
  • 3 cloves garlic, sliced
  • 1 large onion, chopped (about 1 cup)
  • 16 ounces uncooked fresh or cheese tortellini (about 3 cups)
  • 1/2 cup dry white wine (we used sauvignon blanc)
  • 1 jar (23.75 ounces) Prego® Creamy Tomato with Ricotta Sauce

Instructions

  • Tips

    • Cooking the pasta later in the recipe (and not at the beginning), helps to maintain the shape of the tortellini without overcooking it.
  • Step 1

Heat the oil in a 12-inch skillet over medium-high heat.  Add the sausage, sun-dried tomatoes, garlic and onion and cook until the onion are tender, stirring occasionally.

  • Step 2

Cook and drain the tortellini according to the package directions.  While the tortellini is cooking, add the wine to the skillet and heat to a boil, stirring to scrape up any browned bits from the bottom of the skillet.  Cook until the wine is reduced by half.

  • Step 3

Stir in the sauce and cook until hot.  Add the cooked tortellini and toss to coat.  Sprinkle with thinly sliced fresh basil before serving, if desired.
