Step 1
Cook the bacon in a 12-inch skillet over medium heat until crisp. Remove the bacon from the skillet and drain on paper towels. Pour off all but 1 tablespoon drippings from the skillet.

Season the chicken with 1 teaspoon each cumin, oregano and paprika. Heat the skillet over medium-high heat. Add the chicken to the drippings in the skillet and cook for 10 minutes or until browned on both sides. Remove the chicken from the skillet.
Step 3
Reduce the heat to medium. Heat the oil in the skillet. Add the onion and cook for 5 minutes or until tender crisp. Add the garlic and the remaining cumin, oregano and paprika and cook for 1 minute, stirring often.
Step 4
Add the broth and heat to a boil, stirring to scrape up the browned bits from the bottom of the skillet. Stir in the spinach and cook until wilted. Stir in the sauce and cream.
Step 5
Return the chicken to the skillet. Reduce the heat to medium-low. Cook for 5 minutes or until the chicken is done. Season to taste with salt and pepper. Sprinkle the chicken mixture with the cooked bacon before serving.
