Ingredients

  • 2 cups uncooked long grain white rice
  • 1 pound boneless, skinless chicken breast, cut into 1-inch pieces
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 6 ounces fully cooked andouille sausage (about 2 links), sliced
  • 1 extra large onion, cut in half and sliced (about 1 1/2 cups)
  • 2 red bell pepper, cut in 2-inch-long strips (about 3 cups)
  • 1 jar (23.75 ounces) Prego® Creamy Tomato with Garlic Sauce
  • 2 tablespoons chopped fresh parsley

Instructions

  • Step 1

    Prepare the rice according to the package directions.  While the rice is cooking, season the chicken with 1 tablespoon Cajun seasoning.  Heat 1 tablespoon oil in a 12-inch skillet over medium-high heat.  Add the chicken and cook until well browned, stirring often.  Add the sausage and cook for 2 minutes.  Remove the chicken and sausage from the skillet.

  • Step 2

    Heat the remaining 1 tablespoon oil in the skillet over medium heat.  Add the bell peppers and onion and cook for 2 minutes.  Add the remaining 1 tablespoon Cajun seasoning and cook for 6 minutes or until the vegetables are tender-crisp.

  • Step 3

    Return the chicken and sausage to the skillet.  Stir in the sauce and heat to a boil.  Reduce the heat to medium-low.  Cover and cook for 5 minutes or until the chicken is done.  Serve the chicken mixture over the rice.  Sprinkle with the parsley before serving.
