Step 1
Season the chicken with salt, pepper and the paprika. Heat the oil in a 12-inch nonstick skillet over medium-high heat. Add the chicken and cook for 8 minutes or until browned on both sides and done (to prevent sticking, make sure the skillet and oil are hot before adding the chicken). Remove the chicken from the skillet, cover and keep warm.
Step 2
Reduce the heat to medium. Add the tomatoes to the skillet and cook and stir for 30 seconds.
Step 3
Stir in the sauce and milk and heat to a boil. Stir in the uncooked rice. Reduce the heat to low. Cover and cook for 10 minutes. Add the spinach and return the chicken to the skillet. Cook until the spinach is wilted and the rice is tender.
