When you are really pressed for time, Chicken Pesto Quesadillas should be your go-to recipe. It uses just 5 ingredients and is on the table in literally 20 minutes, making it perfect for busy weeknights. We have given this traditional favorite an Italian twist by using pesto, chicken and mozzarella cheese. These Chicken Pesto Quesadillas are so easy the kids can pitch in and make their own. Serve these quesadillas with a side of sauce for dipping to make them even more delicious.
Step 1
Spread 2 teaspoons pesto sauce on each of 4 tortillas. Top each with 2 tablespoons cheese, 1/4 cup chicken and another 2 tablespoons cheese. Divide the remaining 1 tablespoon pesto sauce among the tortillas. Place the remaining tortillas over the filling.
Step 2
Spray a 12-inch skillet or griddle with vegetable cooking spray and heat over medium heat. Cook the quesadillas, in batches, for 1 1/2 minutes on each side or until lightly browned and the cheese is melted.
Step 3
While the quesadillas are cooking, heat the traditional sauce in a 1-quart saucepan over medium heat until hot. Serve the quesadillas cut in quarters with the Italian sauce for dipping.
