Ingredients

  • 2 tablespoons olive oil
  • 1/2 pound bulk pork breakfast sausage
  • 5 cups frozen seasoned crispy hash brown potatoes (works with shredded or diced potatoes)
  • 1 large onion, diced (about 1 cup)
  • 1 large red, yellow or orange bell pepper, diced (about 1 cup) or 6 to 8 mini bell peppers, stemmed, seeded and sliced
  • 1 jar (14.5 ounces) Prego® Creamy Cheddar Sauce or Cheesy Bacon Cheddar Cheese Sauce
  • 2 green onion (scallion), sliced (about 1/4 cup)

  • Step 1

    Heat the oil in a 12-inch nonstick or cast iron skillet over medium heat.  Add the sausage and cook until well browned, stirring often to separate meat.

  • Step 2

    Stir in the frozen potatoes, onion, pepper and 1/4 cup water.  Cover and cook for 10 minutes or until the potatoes are tender.

  • Step 3

    Uncover, stir in the sauce and heat to a boil.  Season with salt and black pepper.  Sprinkle with the green onions before serving.
