This Stuffed Crust Taco Pizza is insanely delicious, and you can really only get one if you make it yourself- good thing making it is so easy! This recipe makes 2 pizzas, which is perfect, since it will go fast. The beef topping is simply sauteed beef, salsa, bell pepper, green onion and cilantro. Tuck some pepper-Jack cheese sticks into the crust (you can really use any flavor!), top with the beef mixture, shredded cheese and some red onion and bake in a cast-iron skillet until the crust is browned and crisp. Drizzle with a quick lime crema to take this Stuffed Crust Pizza over the top!
Step 1
Heat the oven to 400°F. Mix the oregano, salt and pepper in a small bowl. Combine the sour cream, lime juice, lime zest and cumin in another small bowl, then cover and refrigerate.
Step 2
While the oven is heating, cook the beef in a 12-inch cast iron skillet over medium-high heat until browned, stirring often to separate meat. Pour off any fat. Reduce the heat to medium. Stir in the salsa, bell pepper, green onion, olives and cilantro and cook for 5 minutes, stirring occasionally. Season to taste with salt and black pepper. Remove the beef mixture to a bowl and wipe the skillet clean.
Step 3
You'll assemble and bake 1 pizza at a time. Grease the skillet with 1/2 tablespoon oil. Roll half the dough into a 13-inch circle. Press the dough into the bottom of the skillet (the edge will fold in a bit, but that's where you will place the cheese sticks). Unwrap 6 cheese sticks and place around the edge of the dough, folding the dough over to enclose the cheese sticks and pressing to seal.
Step 4
Layer the pizza with half the beef mixture, cheese and red onion. Brush the edge with about 1/4 teaspoon remaining olive oil and sprinkle with half the oregano mixture.
Step 5
Bake for 20 minutes or until done. Carefully remove the pizza to a cutting board and let stand for 5 to 10 minutes before slicing.
Step 6
Assemble and bake the remaining pizza as shown above. Serve the pizzas drizzled with the sour cream mixture.
