Oven-Fried Chicken Chimichangas

Oven-Fried Chimichangas are a delicious way to enjoy chimichangas without all the mess from deep-frying...and guess what? We think they taste better this way!  Tortillas are stuffed with chicken, spices, picante sauce and cheese, then brushed with melted butter to crisp in the oven- so easy and so good!  You can also bake these chimichangas in the air fryer, quickly and without the butter- see the tip below for how.

Ingredients

  • 2/3 cup Pace® Picante Sauce
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano leaves, crushed
  • 1 1/2 cups chopped cooked chicken
  • 1 cup shredded Cheddar cheese (about 4 ounces)
  • 2 green onion (scallion), chopped (about 1/4 cup)
  • 6 flour tortilla (8-inch), warmed
  • 2 tablespoons butter, melted

  • Tips

    • Make without the butter and in half the time in your air fryer!  Preheat your air fryer to 400°F.  Place the filled chimichamgas onto the rack (if your air fryer is small, cook them in 2 batches).  Air fry for 8 minutes or until golden brown.
  • Step 1

    Heat the oven to 400°F.  While the oven is heating, stir the picante sauce, cumin, oregano, chicken, cheese and onions in a medium bowl.  Season to taste with salt and pepper.

  • Step 2

    Place about 1/2 cup chicken mixture in the center of each tortilla. Fold the opposite sides over the filling. Roll the tortillas up from the bottom and place them seam-side down on a baking sheet. Brush the tortilla rolls with butter.

  • Step 3

    Bake for 25 minutes or until golden brown. Serve with additional picante sauce.
