Grilled Cilantro Jalapeño Lime Shrimp Skewers is the unicorn of dinner recipes. It looks and tastes like a special occasion dish, but it's actually a super-easy weeknight meal that you can make in 15 minutes with only 5 ingredients and some skewers! Toss the shrimp with the sauce and fresh cilantro before grilling and stir more sauce into cooked rice right before serving. Keep the sauce bottle tableside so everyone can add more to taste!
Step 1
Stir 1/3 cup sauce, the oil and 2 tablespoons cilantro in a large bowl. Remove and reserve 2 tablespoons mixture. Add the shrimp to the bowl and toss to coat.
Step 2
Heat a grill pan over medium-high heat. Place 6 shrimp on each skewer. Grill for about 2 minutes per side or until done, brushing with the reserved sauce mixture.
Step 3
Stir the remaining about 1/4 cup sauce into the hot cooked rice. Serve the rice with the skewers. Sprinkle with the remaining 1 tablespoon cilantro and lime wedges, if desired.
