This Folded Breakfast Quesadillas recipe brings you the viral TikTok quesadilla hack when it's most needed: first thing in the morning. Fluffy scrambled eggs, Cheddar cheese, crispy bacon and guacamole are folded into flour tortillas with a layer of perfectly seasoned Pace® Classic Taco Sauce for a burst of flavor. Placing each ingredient into its own section then folding in quarters holds the filling inside, finish in a hot skillet so it's golden brown and crisp on the outside. Eat at home or take it on the go!

Ingredients

  • 4 flour tortilla (10 inch), warmed
  • 1/4 cup Pace® Signature Sauces Classic Taco Sauce
  • 1 cup shredded Cheddar cheese or 4 slices Cheddar cheese (about 4 ounces)
  • 8 egg, scrambled until set
  • 1/4 cup guacamole
  • 4 slices bacon, cooked, drained and cut in half
  • 1 tablespoon vegetable oil

Instructions

  • Step 1

    Place 1 tortilla on a work surface.  You will be topping each quarter of the tortilla with a different topping:  Make a cut straight down from the center of the tortilla to the edge.  Spread 1 tablespoon taco sauce on the quarter to the right of the cut.  Sprinkle 1/4 cup cheese on the quarter to the left of the cut.  Spoon 1/4 of the eggs on the quarter above the taco sauce.  Spread 1/4 cup guacamole on the quarter above the cheese and top with 2 pieces bacon.

  • Step 2

    Fold each quarter over the next to make a 4-layer quesadilla: Take the cut edge of the tortilla and fold the taco sauce quarter up over the egg quarter, then fold that over the avocado quarter, then over the cheese quarter.  Repeat to assemble the remaining quesadillas.

  • Step 3

    Heat the oil in a 12-inch skillet over medium heat.  Add the quesadillas and cook for 3 to 4 minutes or until golden brown on both sides and the cheese is melted.  Serve with additional sauce for dipping, if desired.
