Taquitos are crispy, rolled "little tacos" that are usually deep-fried. Part of what makes this Air-Fryer Chicken Taquitos recipe so much better? You guessed it, the taquitos are air-fried instead! Less work, less mess and more flavor, thanks to the spicy enchilada sauce in the chicken and cheese filling. You only need 5 ingredients! Just mix some enchilada sauce with cooked chicken and Cheddar cheese, roll up in corn tortillas, place into the air fryer basket, then air-fry until crisp and golden brown. Stir more enchilada sauce into sour cream for a creamy, spicy dipping sauce and you can have Air-Fryer Chicken Taquitos in less than 25 minutes.
Step 1
Heat the air fryer to 375°F. Stir the chicken, 3/4 cup sauce and the cheese in a bowl. Spray the air fryer basket and both sides of the tortillas with cooking spray.
Step 2
Divide the chicken mixture among the tortillas. Roll the tortillas up tightly around the filling. Place seam-side down into the air fryer basket.
Step 3
Air-fry for 12 minutes or until crisp. Stir the remaining enchilada sauce and the sour cream in a bowl. Serve the taquitos with the sour cream mixture for dipping.
