This easy slow cooker shredded Mexican beef recipe has just 4 ingredients and takes 5 minutes of prep.  Did we mention that it tastes great too?  All you need is beef, onion, Pace® Chunky Salsa and chipotle peppers.  Add everything to the slow cooker, set it and forget it.  The beef slow cooks until it's fall-apart tender and juicy in the salsa and chipotle sauce.  The salsa adds just enough zip to complement the smokiness of the chipotle and the richness of the beef.  Shred the beef and stir back into the sauce—serve over hot cooked rice or use as a filling for tacos, burritos or even sliders!

Ingredients

  • 3 pound boneless beef chuck roast, cut into 2-inch pieces (trim off excess fat)
  • 1 large onion, coarsely chopped (about 1 cup)
  • 1 jar (16 ounces) Pace® Chunky Salsa
  • 1/4 cup chopped chipotle peppers in adobo sauce

Instructions

  • Step 1

    Place the beef and onion into a 6-quart slow cooker.  Season with salt and pepper.  Add the salsa and chipotle peppers and stir to coat.

  • Step 2

    Cover and cook on HIGH for 4 to 5 hours (or LOW for 6 1/2 to 8 1/2 hours) or until the beef is fork-tender.  Using 2 forks, shred the beef in the cooker.  Serve the beef mixture over hot cooked rice or as a filling for tacos or burritos.
